Hot tea is appreciated in so many places around the world. Whether you are walking the moors of England, hiking through hills in Scotland, riding the train through India, appreciating art in Italy; tea the world over is a much needed commodity. One could say, “Who could live without tea? Not I, for tea is but the soul of me”

Whatever season-and now November, “tea warms the depths of the heart, soothes the mind and sustains the soul”

Tea History Fact:

In honor of Remembrance Day, the following is very interesting, during the Second World War, Winston Churchill was known to have said that tea was more important than all of the guns they used to fight. The British had said that fighting would have been next to impossible without the steady supply of tea made available to them. Even though German U-boats were in the Atlantic Ocean sinking ships with important supplies; tea still made its entrance into Britain. New tea trolleys that sat in English train stations symbolized new and improved economic and social improvement.

 

 

 

Decaffeinating your pot of tea:

Did you know that if you want decaffeinated tea one day or evening you can do that yourself…? Just steep your tea as usual, but pour the first infusion off-in other words, after the allotted brewing time is done, and the kettle has just boiled, than re-pour the fresh water from the kettle, over the leaves once again-and your new pot of tea will be decaffeinated! 

 

 

What is Red tea?

Red tea is also known as Rooibos tea and is naturally decaffeinated. The tea comes from the shrub “Aspalathus Linearis” with grows in South Africa on the North Western Cape. The needle like green leaves of the plant are cut and than dry in the sun, they than turn a red mahogany color. There is little rain tin the region where Rooibos grows. The soil is acidic, sandy and contains no nitrogen, which is needed for plants to grow. However, the Rooibos plant does well because of the long root which reaches up to two metres in a plant that is mature. The plant can than reach into the soil for each drop of water, and can stand very dry heat. The plant is a legume (peas and beans) so it binds nitrogen through the bacteria on the roots-taking nitrogen from the air and putting it into the plant, which than needs not fertilization or irrigation.

Rooibos tea is high in antioxidants, the properties that fight against free radical damage in the body. According to studies, Rooibos is good for headaches, asthma, insomnia, hay fever, aids in digestion, relieves stomach irritation, nervous tension. Rooibos is good for cystitis and prostatitis, because it contains the anti-inflammatory antioxidant quercetin, which helps relieve symptoms of prostatitis.  Skin condtions such as psoriasis, eczema, and dermatitis may benefit when the tea is applied on the skin, and can also be used as a wash or rinse for the scalp. Rooibos is good for mothers who are breastfeeding as well as for older infants and toddlers, when cooled down. It may be good for baby’s stomach cramps, and restlessness. Rooibos can be also used in cooking, such as in soups, meats and other dishes.

Darjeeling Tea- A wonderful tea from India. 

Darjeeling tea is a rare and delicate tea from India. There are three different teas which are called flushes. These refer to the season the tea is picked in. The first flush is picked in early spring and is considered the highest quality of the leaves. The second flush is picked in the summer and the third in the autumn.   The first yields a light and floral aroma, the second flush is fruity and full bodied, and the third is deep and rich with a full aroma and flavor.

The gardens are in Darjeeling India, which lie within the Himalayan Mountains. The gardens there include, include, Margaret’s Hope, Puttabong, Orange Valley, Ambootia, Namring, among others. The proper amount of wind, rain and the climate will produce teas that are blended properly and true to their origination.  Drink Darjeeling mainly as an afternoon tea, preferably without milk or lemon.
